Just Salad Partners With Celebrity Chef Marc Forgione To Upgrade A Classic Salad


As the weather warms, crisp and flavorful fresh salads become increasingly inviting, and nothing makes a dish quite as appealing as knowing it had been crafted by a celebrity chef.

Just Salad just launched their spring salad menu, and aside from a few new menu and ingredient addition, the most standout news was that it includes a limited-edition Chopped Mezze salad, created in collaboration with New York City-based chef Marc Forgione.

Chef Forgione's Chopped Mezze salad is made with a blend of supergreens (a mix of iceberg, romaine, kale, spinach and spring mix) as its base, and that's topped with regenerative organic chickpeas, sliced cucumbers, pickled onions, sliced grape tomatoes, Kalamata olives, crumbled feta, and hemp hearts. This is all tossed in an Oregano Vinaigrette (also new to the Just Salad menu), which is a blend of red wine vinegar, mayonnaise, Dijon mustard, Extra Virgin Olive Oil, Sunflower Oil, and dried oregano,.

Salad eaters are well aware the secret to developing a habit eating lots of fresh, crisp, greens is to keep things fun and interesting. No one is going to make something boring and uninspired part of their lunchtime routine.

But, of course, it helps if you start out liking salad, and that was the case with this chef. "I have always been a big salad eater, and even more so as I get older. When my agent called and asked if I'd be interested in working with Just Salad, we jumped on the opportunity and couldn't be happier with the partnership," said Chef Marc Forgione in an email interview.

Part of keeping a salad enticing is layers of flavor and lots of color — but also adding a variety of texture and crunch aspects. "I love a good salad for texture, almost as much flavor, so as you can see in the ingredient list a lot of them add some crunch. I recently fell in love with hemp hearts on my granola so figured I'd give it a shot on the salad. Very happy with the way it came out," said Forgione.

The Chopped Mezze's ingredients take clear inspiration from a classic Greek salad, but that's not the only classic in the mix. "The Chopped Mezze is a twist on the traditional Greek salad because it was created as a play on one of my favorite things to eat at a steakhouse... the American chopped salad. I do feel that the Greek salad is a classic and, as with all my dishes, I always like to show respect to the original while adding my playful touches," said Forgione.

Just Salad often partners with influencers or chefs to create special limited-time seasonal salads. For example, in recent years, they have partnered with Baked by Melissa's founder Melissa Ben-Ishay and wellness expert Mona Vand, and more recently, celebrity chef Amanda Cohen.

The limited-edition Chopped Mezze salad is currently available on the Just Salad spring menu and will remain available through late June.
